By default, in Windows Server the option for hibernation is disabled, and you must enable it before you can use it from the power manager. You can follow this article to enable it in Windows Server 2008 and later versions.
Open CMD or PowerShell with administrator privileges and run:
# powercfg.exe /hibernate onOnce you have done this, you can select the hibernation options in Windows power settings:
